Ingredients Brewer’s Mop

A straight forward mop that I use during long, slow cooking times. When smoking brisket or pork shoulder, I hit it with the mop on the hour. It coats well, but brings in moisture and flavor rather than glazing up or burning like a sauce would.

12 ounces of Sundog amber ale
½ cup cider vinegar
½ cup water
¼ cup canola oil
1 cup minced onion
4 garlic cloves minced
2 Tablespoons Worcestershire sauce
2 Tablespoons Freddy’s Magic Spice Rub

Method Place oil and onion in a medium saucepan over low heat; cook and stir until onions are tender, and add garlic. Cook 1 minute. Add remaining ingredients and stir. Cook over medium heat for 15 minutes.
