Ingredients 1 Tablespoon Extra-virgin Olive oil
1 Tablespoon Malt Vinegar
1 Tablespoon stone ground mustard
1 Tablespoons lemon juice
1/3 cup Mad Hatter India Pale Ale
1 teaspoon kosher salt
½ teaspoon black pepper
Method This vinaigrette can be whisked in a bowl or spun in a food processor. Combine the ingredients, season to taste and adjust as necessary.

Mix arugula, spinach and/or other spring greens. Add some thinly sliced red onion, some crumbled blue cheese and chopped walnuts. Toss with Hatter’s Vinaigrette and you have a delightfully aromatic salad, perfect for any spring meal.
