New Holland Artisan Spirits has developed “Brewers’ Whiskey”, a series of small-barrel whiskeys twice distilled from a “beer wash” and laid down in small casks with a heavy char. Now available: Black River Bourbon and Ichabod’s Flask.
Our series of small barrel whiskey starts with wash; mashed & brewed from grains, then fermented, a process close to any brewers heart. The wash is pot-distilled and aged in new american oak. Small barrels accentuate and accelerate the barrel-aging process turning our smooth brewers’ wash into whiskey with barrel character well beyond their years.
Black River Bourbon
Small barrel bourbon distilled from corn and barley. Like all of our whiskies, Black River Bourbon is lautered, a brewing technique which includes managing fermentation separate from mash-in. Caramel and molasses tones coaxed from the grains, combine with vanilla-sweet oakiness for a robust character, smooth body and a nutty finish.
Ichabod’s Flask
Inspired by our infamous spiced pumpkin ale, Ichabod. Flavors of spice, coconut, chocolate and mint intertwine in a unique and elusive flavor profile. This product was not cold-filtered and may show various degrees of haze.
Aging whiskey in small barrels is an innovative technique that increases the whiskey to wood contact, enhancing and accentuating the flavors drawn from the oak barrel. For New Holland, this has created opportunities for several Brewers’ Whiskey releases in addition to the distillery’s flagship whiskey, Zeppelin Bend, which spends more than three years in full size barrels and releases twice a year. New Holland Artisan Spirits expects to release at least four new Brewers’ Whiskeys in 2011, each coaxing unique and interesting flavors from an artfully brewed “beer wash.”
