“Brewers’ Whiskey”, a series of small-barrel whiskeys twice distilled from a “beer wash” and laid down in small casks with a heavy char, was introduced by New Holland Artisan Spirits in 2010. Fermented from a whiskey-wash of malted rye and 2-row malted barley, Walleye Rye is twice-distilled and matured in small American oak barrels. New Holland’s interpretation of rye whiskey begins with a bright and vibrant nose, leading to spicy rye character and a dry, toasted body bathed in oak.
Walleye Rye presents deep amber color and rich aromas of toffee and vanilla, which small casks produce in abundance. This whiskey flavor opens warm and sweet, then moves to subtle spicy rye character. A mild peppery finish completes this balanced whiskey.
